Industrial fruit



Aurum ProcessTechnology has developed key technology for the industrial processing of fruit-based products. These products are primarily fruit concentrates (seeded fruit, citrus, tropical fruits…) in different shapes: pulp, purées, dices, slices, etc. These semi-elaborated products are then used in other industries for dairy products, pastries, etc.

Fruit concentrates have a considerable amount of sugars and thickening agents, such as pectin. These components generate high fouling levels under high temperature conditions, due to their tendency to stick to hot surfaces. This fouling layer prevents efficient heat transfer and it is a source of contamination for the products; thus, traditional heat exchangers require to constantly stop the production process to clean them. Besides, these semi-elaborate fruit-derived products tend to have particles that ought to keep its shape, such as dices and slices of apple, pear, strawberry, peach, nectarines, etc.

Based on our experiences at many industrial facilities, we have developed the technology that best adapts to thermal processes involving fruits, by minimising the amount of time that fruits are exposed to heat. We are thus able to obtain a high-quality product that maintains the original nutritious properties and flavour of fruits.

Similarly, we are careful to preserve the product’s shape and structure: fruit dices and slices do not break or crushed; therefore, our technology allows a very effective processing of these rather viscous products while preventing the formation of fouling deposits.
