Description

“Sterilization-in-place” (SIP) is commonly used in food industry processing lines to ensure the elimination of microorganisms before the start of the production sequence.

The most common method involves using sanitary steam heated to 120ºC during 30-minute cycles. This method reuses the steam generation facilities already present in most industrial facilities.

Alternatively, peracetic acid at 60ºC can be used as disinfectant in the sterilisation process, thus reducing the consumption of energy versus steam-based sterilisation processes or those requiring overheated water. Another advantage of this system is that because it involves working under relatively low temperatures, it does not require the pressurisation of the whole processing line, thus reducing the investment costs.
